Potatoes
Potatoes should be #1 kitniyot product. They make a flour that looks like wheat flour, much more than rice, peas, corn, and other such products.

I think the new rule is that any product which can be purchased without food stamps is chometz unless you take it on credit with no intention or ability to pay it off unless you get emergency welfare grants or a handout.
Seriously, the inyan was also grains grown near wheat, and corn may have been a confusion between the word Korn in German which is rye and corn in English.
